Farm Animals - The animals growing at the farms are used for meat at the restaurant and at the workers kitchen. From the cattle we obtain meat, milk, cream and variety of cheeses. The pigs are used for ham, sausages, smoked pork chops, meat. Chickens provide broilers and eggs, as well as the turkeys, quails and geese. The animal by-products are used as fertilizer for the coffee industry.

Chickens -  At the chicken coot we have two types of chickens, broilers and hens. Other types of birds are also kept in the chicken coot, such as quails, geese, ducks and turkeys. They reside on a concrete floored house, which is covered with rice husk to keep them clean.  The rice husk is changed twice a week and this rice husk with manure is taken to the compost bins. The chickens are used at the hotel and in the worker's kitchen; we use all the chicken's parts. The restaurant uses only the breast and legs, the workers kitchen use the rest.  Parts that are not edible are used for the pigs. The feathers go for compost, and the blood and all the water involved in the cleaning go to the same lily pig pond. Nothing is wasted. We have learned how to smoke chicken and turkey. The quail eggs are used in the restaurant and all the egg shells of the quail and hens are used in the compost bins.
