Organic is a way of life at Selva Negra and you will witness that first hand on our menu. Selva Negra feels very strongly about the quality of the food we prepare. Fruits and vegetables grown without the use of herbicides, pesticides and fungicides, and animals raised without the use of hormones and antibiotics, are the fundamental basis for organic farming. What could be better than to eat clean, healthy food that has not been sprayed or injected with chemicals?

The majority of the items on our menu are organically produced here on the estate. Menu items produced include:

Meat and Eggs

Our cattle and free-range pigs are raised on organic pasture. We raise quail for eggs, and chickens for eggs and meat. We produce our own ham, salami, steak, and sausage.

Milk and Cheese

We produce all the butter, cream, yogurt, and milk we serve. We also make our own artisan cheese - Manchego, Camembert, Feta, Gouda, and more.

Breads, Pastries and Desserts

Pastry chef Roy Martinez creates artisan breads, and deserts made from fresh, seasonal ingredients - from Mocha and Triple Chocolate Cakes, to Mango Cream.

Selva Negra Gourmet Coffee

Our 100% Arabica coffee is grown organically on our cafetal, hand-picked and roasted in our beneficio. It is certified by the Rainforest Allianceand BioLatina Organic.

Ecolodge and Coffee Rainforest Certified
