"A HARVEST AFFAIR Amigos, if you want to learn everything there is to know about coffee, start from the ground-not to be confused with grounds-up. The Selva Negra Mountain Resort and Coffee Estate in Matagalpa, Nicaragua (Km 140 Highway Matagalpa-Jinotega), offers guests a chance to see the operation of a sustainable coffee farm. And, from mid-November through February, you can witness (and participate in) the harvesting process-picking the coffee cherries one by one. You'll appreciate your usual morning boost all the more. There are plenty of other activities in the area, such as horseback riding and bird-watching-enough to bring on a good night's sleep in the boutique, chalet-style lodging. Rates range from US$35 a night for a hotel room (based on double occupancy) to US$175 a night for a five-bedroom chalet." - Wanda Lust Delta Sky
