Farm Animals - The animals growing at the farms are used for meat at the restaurant and at the workers kitchen. From the cattle we obtain meat, milk, cream and variety of cheeses. The pigs are used for ham, sausages, smoked pork chops, meat. Chickens provide broilers and eggs, as well as the turkeys, quails and geese. The animal by-products are used as fertilizer for the coffee industry.

Cattle - The cattle ranching at Selva Negra is an original concept in the country of Nicaragua. It is among the first farms applying the intensive rotating pasture method. This means a large herd of cattle is contained in small pieces of land with daily rotation to the best grass-growing fields. It includes shade in each of the areas of lots with water for drinking and if possible with field irrigation, which at Selva Negra it is done with the water used in the coffee process. At the coffee mill water is used to wash the coffee, it gets extremely contaminated and then taken to bio-digesters to be processed, this water. Once cleaned, it's used for irrigation on all the pasture land during the dry season. The water has organic material which serves as a fertilizer, each of the parcels are also fertilized with all the cow manure of the cattle taken on each rotation.
Electric fencing is also used, using solar energy. At Selva Negra, whenever possible, environmental works are always selected. For examples the biogas of cow manure, its affluent is used as fertilizer on the coffee plantation.
