Farm Animals - The animals growing at the farms are used for meat at the restaurant and at the workers kitchen. From the cattle we obtain meat, milk, cream and variety of cheeses. The pigs are used for ham, sausages, smoked pork chops, meat. Chickens provide broilers and eggs, as well as the turkeys, quails and geese. The animal by-products are used as fertilizer for the coffee industry.

Pigs -  We started pig farming to use all the left over food from the restaurant and the workers kitchen. These leftovers from the kitchen and the vegetables fields served as primary food for the pigs.  The pigpen obtains as many by-products, such as the rice husk that covers the concrete floor, this easily collects the pig manure. The collection of the manure and rice husks is then taken to trenches where Californian worms will decompose it, transforming it into top soil.  The pigpen is cleaned twice a day, covered with rice husk again and then water used for cleaning is collected in a pond with lilies to clean it up. This water is later used for irrigation on the pastureland. The pigs are slaughtered at the farm. We prepare all the meat at the farm, smoke it, make sausages, ham, etc. We don't let anything go to waste.
